I went to a wonderful restaurant in Capitola, California where they served olive oil in small dishes so you could dip your bread into them. One day I was there and they had the sweetest garlic mixed in the olive oil. I looked at it and thought it would be very strong tasting but it was sweet! I asked the chef how he did it and he told me he roasted the garlic until it was tender and then marinated it in the olive oil.

Roasted Garlic Olive Oil

Ingredients:

  • 1 bottle Trader Joes high quality extra virgin olive oil
  • 4 whole heads of garlic
  • Slice the tops off the heads of garlic, drizzle with a little olive oil, and wrap tightly in aluminum foil.

    Bake in 350F oven for 45 minutes (more or less according to your oven)


    Remove from oven and let cool.

    Take the baked garlic and squeeze the garlic from it's leaves trying to keep them whole

    Heat the olive oil until warm and place the garlic pieces in the olive oil to infuse the oil with their flavor

    Let the garlic and oil stand for a few days to increase the flavor
    Serve the oil and garic in small dishes with lots of crusty Italian Bread and a glass of white wine.
