I asked the chef how he  did it and he told me he roasted the garlic until it was tender and then marinated it in the olive oil.

I'd say they had a lot of money invested in drugs to fight  cholesterol. Wouldn't it be in their best interests to belittle the use  of garlic to lower serum lipids so that their products could be peddled  to the American people as a cure for high cholesterol? I am certainly  not saying that these drugs should not be used. In fact some of these  drugs are life savers.

I see nothing wrong in adding garlic to your diet to help  keep your body strong and healthy. It certainly can't hurt you and  thousands of years of use of this medicinal plant says a lot. It's kinda like Willow Bark tea. The drug companies can't tell you not to use it  because willow bark is used to produce Aspirin. It also has been used  for centuries (since before the dark ages) for pain.
